Christmas Treats – Gluten Free Vegan Rum Balls


Rum Balls have long been associated with Christmas treats but when I went Vegan, they like many other foods went off the menu. Thanks to so many amazing new products hitting the shelves in online stores, health food shops and supermarkets we can now enjoy a Vegan version of this festive treat. I’ve also made them gluten-free using Leda’s Arrowroot Biscuits.

This recipe is easy to make and requires no baking.

Ingredients

2 Packets (410g) Leda Arrowroot Biscuits

1 Cup Desiccated Coconut

1/2 Cup Cacao Powder

1 can (320g) Coconut Condensed Milk

1 Tsp Vanilla Essence

1 Tsp Cinnamon (optional)

4 Tbsp Coconut Rum (or rum of choice)

1 Pinch of Salt

1 Cup extra Desiccated Coconut for coating the balls

Method

  1. Place the biscuits in a zip lock bag and crush with a rolling pin or place in a food processor and pulse until fine crumbs form. It’s OK if you have a few large crumbs.
  2. Add all the dry ingredients to a large mixing bowl along with the Vanilla Essence and the Coconut Rum.
  3. Mix together well with a wooden spoon and then add the Condensed Coconut Milk
  4. Stir through making sure the ingredients are well mixed. If your mixture seems too wet add extra Desiccated Coconut and Biscuits.
  5. Let your mixture chill in the fridge for an hour so it is easier to form balls (if the mix is too soft you’ll end up with flat bottoms).
  6. Use a dessert spoon to measure out portions of the mixture, roll between your hands into balls and then roll in the extra Desiccated Coconut.
  7. Keep refrigerated until you’re ready to serve.
